My husband was diagnosed with high cholesterol and needed an angioplasty and stent. We know what he can't eat (including white bread, white rice, white pasta, butter, very little eggs and cheese, etc.) and the kinds of thing that he can eat. But just knowing what someone can eat does not tell you how to cook nutritious, interesting meals. I have been searching for recipes that meet his needs. Phenomenally, in this day and age, there is practically nothing av ailable. The write up to this book led me to believe it would include the sort of recipes we need. I was pretty unhappy to see that most of the recipes include forbidden foods, including butter, eggs and refined grain. Aside from a few recipes for brown or wild rice and other whole grains, it has been almost useless. Also, the 1,001 title is very misleading! What he does is take a basic recipe, add one or two different ingredients, and call it a whole new recipe. Example: brown rice with chicken broth, or with parsley, or with some other teeny change that should have been just options off the main recipe.

I can't say enough good things about this book. I use it constantly in my cooking. A lot of wonderful bread recipes are included. That is one of the hardest things to get right in the low sodium world. You really miss getting to make a good sandwich that does't fall apart before you can eat it. Now you can.

My husband had quadruple by-pass surgery and has high blood pressure. He is on low-sodium, low fat, low cholesterol diet. It's been hard trying to find recipes that add flavor and ways to season foods so they still taste good. This cookbook has many recipes that will keep him track with his diet and taste delicious, and we keep continuing to find more in this book.

Many many good recipes and organized in a great format. I have found many good recipes that really work. There a many more I intend to try. As a diabetic I need to adapt many of the recipes. Even some do not meet the newest "heart healthy" standards since this is a compilation of two older books. but they can be adapted.

For me, some of the best recipes are the staples. Normal soy sauce has almost 1,000 mg of sodium. The recipe in this cookbook for low sodium soy has only 50+ mg. a few things require a trip to a Whole Foods or other market, but being able to make the foods my family loves, that tastes the same only without the heart troubling ingredients, is worth the trip.

I've tried many recipes in this cookbook. It's great to have all the nutritional information for each recipe- but be careful! Often times, the recipe seems pretty healthy until you see how many people it serves and thus what the actual serving size is (small!) I've had to improvise many of the recipes because I've felt that the written recipes were too bland. Overall, I give it 4 stars even if I do make changes, because it gives me a good springboard to start cooking a bit more healthy.

Made the transition to a heart healthy diet much more bearable than I expected. Great recipes and nice organization.

I have three of his books and they are all fantastic. Great recipes, easily available ingredients, and common sense. With a heart condition and a spouse with diabetes this is great.

My husband and I are planning a two week trip to Utah in October to celebrate our 65th birthdays driving from SLC to Moab and on to Navaho Nation and Bryce and Zion ending up in Las Vegas.I was reluctant to download the kindle version of a new guidebook that had not been reviewed, but glad I did.I like the way the authors have divided the big state into sections. Easier to digest the info that way. I especially like the Say it Right section with correct pronunciations. Not being Mormon, I found the section on Conduct and Customs interesting if we encounter standoffish folks. What I hadn't thought of at all, and the authors brought to my attention, was the possibility we wouldn't be able to buy gas on Sundays and the likelihood restaurants will be closed. Will make sure our gas tank and cooler are full. The other thing that I found helpful was the recommendations on healthy restaurants and vegan/vegetarian friendly restaurants. We are both 20 year vegetarian/vegan plant based eaters so to find this in a guidebook is a plus. Even carnivores might was to take a break once in awhile. Very helpful.Although the kindle version is very handy, I will likely buy the paperback as I like to bend, tear apart and mark up a guidebook. After all, a guidebook is a minuscule cost of our entire trip, but can make a big difference.

Lots of good details.

One of the things I really like about Moon Guides is that they are very complete, covering everything that is necessary to know about visiting the destination. The "essential" section covers transportation, health and safety, business hours, services, etc. This is especially important for visiting Utah, because it is predominantly Mormon and slightly different in terms of customs and culture. For example, it is good to know that everything shuts down on Sundays, and the traveler needs to plan ahead to gas up and figure out what to do about meals before Sunday arrives. A very nice section of historical background of just the right length enhances an understanding of the area.I also appreciate the Moon Guide way of organizing the destination into manageable sections, greatly facilitating trip planning. A day to day itinerary featuring the best of Utah is provided, though cross referencing with page numbers that is included in some Moon guides is not available in this one. All the sites are described in detail, with a good range of recommended lodging and restaurants. We have been to Utah many times and thought we've pretty much covered most of where we want to go, but this guide helped us identify Kanab as a new area to explore.

It was a good guide. But we were trying to find out about Utah Data Center but there was no information. We had to figure out the hike ourselves and how to get there. We didn't even get access to it. The Utah Data Center is like a monument of our time! It's like a must see!#travelNSA #abovethecloud #breakthecloud #peoplenotdata #bitchwheresmydata #visitNSA

Review

“Admirable and unexpected...a riveting story that will have his readers weeping with both laughter and sorrow.” —Chicago Tribune“Blood Done Sign My Name is a most important book and one of the most powerful meditations on race in America that I have ever read.” —Cleveland Plain Dealer“Pulses with vital paradox . . . It’s a detached dissertation, a damning dark-night-of-the-white-soul, and a ripping yarn, all united by Tyson’s powerful voice, a brainy, booming Bubba profundo.” —Entertainment Weekly“If you want to read only one book to understand the uniquely American struggle for racial equality and the swirls of emotion around it, this is it.” —Milwaukee Journal Sentinel“Engaging and frequently stunning.” —San Diego Union-Tribune

From the Inside Flap

"Daddy and Roger and 'em shot 'em a nigger." Those words, whispered to ten-year-old Tim Tyson by a playmate, heralded a firestorm that would forever transform the tobacco market town of Oxford, North Carolina. On May 11, 1970, Henry Marrow, a twenty-three-year-old black veteran, walked into a crossroads store owned by Robert Teel and came out running. Teel and two of his sons chased and beat Marrow, then killed him in public as he pleaded for his life.Like many small Southern towns, Oxford had barely been touched by the civil rights movement. But in the wake of the killing, young African Americans took to the streets. While lawyers battled in the courthouse, the Klan raged in the shadows and black Vietnam veterans torched the town's tobacco warehouses. Tyson's father, the pastor of Oxford's all-white Methodist church, urged the town to come to terms with its bloody racial history. In the end, however, the Tyson family was forced to move away.Tim Tyson's riveting narrative of that fiery summer brings gritty blues truth, soaring gospel vision, and down-home humor to a shocking episode of our history. Like "To Kill a Mockingbird, "Blood Done Sign My Name is a classic portrait of an unforgettable time and place.

This book is very interesting. It is honest and brutal about the historical nature of interactions between blacks and whites. Some of the content is very graphic and might not be suitable for everyone. I love this book because it is the first one I've ever read that gives a personal account of what interracial relationships were like (honestly) from a personal perspective. This book discusses things that many people aren't comfortable talking about. It is a good read for those who would like to know the truth about the nature of interracial relationships in the past and why they can be difficult to foster in today's society. This book was a requirement for one of my classes in school. It is the first assigned reading that I have actually enjoyed.

In "Blood Done Sign My Name", Timothy B. Tyson examines the murder of Henry Marrow, a twenty-three year old black man, in Oxford, South Carolina, on 11 May 1970. The book combines both historical research about race relations during the late 1960s, in which Tyson attempts to dispel popular myths of civil rights, with Tyson’s own memory of growing up in Oxford and the racial caste system in the town. Tyson concludes of the period and its legacy, “Everyone in this struggle, adversaries and advocates alike, grew up steeped in a poisonous white supremacy that distorted their understandings of history and one another. That history is not distant” (pg. 320). He argues that Americans cannot gloss over the more complex parts of this history in favor of a simplified narrative as this does an injustice to history and those who lived it.Marrow, a veteran, demonstrated the betrayal that veterans felt after fighting on behalf of the United States’ ideals. Tyson writes, “Like generations of black veterans before them, who had come home from France or the Philippines insisting that their sacrifices had bought them full citizenship, the Vietnam generation demanded justice. Though they had paid the price, more would be required” (pg. 9). Like Eugene Genovese’s "Roll, Jordan, Roll", Tyson uses paternalism to explain the race relations of the mid-twentieth century. He writes, “Paternalism was like a dance whose steps required my grandmother to provide charity to black people, as long as they followed the prescribed routine – that is, coming to the back door, hat in hand; accepting whatever largesse was offered; furnishing effusive expressions of gratitude; and at least pretending to accept their subordinate position in the social hierarchy” (pg. 25). While whites that subscribed to this system believed it represented harmony, it prevented any real connections from forming between Oxford’s white and black residents.Like Gail Bederman and others, Tyson links race with gender, writing, “Segregation…existed to protect white womanhood from the abomination of contact with uncontrollable black men. Whites who questioned segregation confronted the inevitable and, for most people, conclusive cross-examination: Would you want your daughter to marry one?” (pg. 37). This played a key role in Marrow’s death as his murderers accused him of saying something flirtatious to a white woman. In grounding the civil rights struggle in the backdrop of the Cold War, Tyson writes, “The Cold War competition between the United States and the Soviet Union offered African Americans the unique leverage to redeem or repudiate American democracy in the eyes of the world. The demonstrations in the streets of the civil rights-era South were carefully staged dramas that forced the contradictions of American democracy to the surface” (pg. 67). This forced this issue to a head since it embarrassed the American government on the international stage. In contradicting the traditional narrative of civil rights, Tyson writes, “Polling data revealed that the majority of white Americans in 1963, prior to the Civil Rights and Voting Rights Acts, believed that the movement for racial equality had already proceeded ‘too far and too fast’” (pg. 106). Rather than accept change, white Americans were compelled by the federal government in 1964 and even then still attempted to avoid government coercion. To this end, Tyson writes, “Those who tell themselves that white people of goodwill voluntarily handed over first-class citizenship to their fellow citizens of color find comfort in selective memory and wishful thinking” (pg. 249). In addition to overturning the popular narrative of civil rights, Tyson works to combat the popular narrative of the Civil War in the South. He writes, “White supremacists and neo-Confederates have made enthusiasm for the Confederacy posthumously unanimous. Some of them will even try to tell you that the slaves loyally supported the Confederacy, which is just a damn lie” (pg. 172). Despite this lie, it demonstrates the lingering need in the South to justify the racial hierarchy established after Reconstruction.

Timothy Tyson calls this work “both memoir and history.” Likening the story to both the blues and the gospels, the author argues that the story he narrates is “an honest confrontation with our own history… urging us to confront our rage, contradictions, and failures and the painful history of race in America.” Tyson details the 1970 murder of Henry Marrow in Oxford North Carolina (Tyson’s home town), an act which brings to the surface the open would of race relations in a small southern town. As the author notes, there is “no clean place in this story where anyone can sit down and congratulate themselves.” Finally, the author says that while this is the story of a small boy in a small town, it is also the story of a nation torn apart by racial, political, social and cultural clashes so deep they continue to affect our lives today.Tyson begins his narrative in Chapter One with the murder of young Henry Marrow (a Vietnam veteran), but the point of view is his as a ten year old boy, not fully understanding what was happening. The narrative is not told chronologically, and the author moves back and forward through time, discussing the case itself, southern history and his own family history, all of it interwoven though various themes (discussed below). Tyson notes, as have other authors of the era, the late 1880’s was a time when white conservatives felt threatened by black freedom and had reacted by denouncing whites who voted with blacks as race traitors and finally moved (sometimes violently) to solidify their hold on power and disenfranchise blacks. By 1970, the year of the murder, Tyson notes Oxford was unaffected by the Civil Rights Movement. Schools were still segregated as were most, (if not all) aspects of life in the town. The murder would place Oxford at ground zero in the movement for Civil Rights as blacks finally had had enough. That summer blacks attacked the hierarchy of white supremacy in reaction to the murder and then, after the accused were acquitted the movement took it a step further. A boycott of all white businesses ensued (especially devastating as blacks accounted for 40% of all shoppers) and bombings of tobacco warehouses caused millions of dollars in damage. Finally, business leaders agreed to hire blacks in positions other than as janitors, the confederate solider statue was moved to a less prominent position and schools were integrated (although many white parents moved their children to all white private “religious” schools). Finally, Tyson notes that this is the essence of the civil rights movement. The main stream narrative of the federal government riding to the rescue is false; the idea that a national movement brought about rights to black Americans is false. Instead, the fight for equality was a localized movement led by local people who simply wanted to be treated as human beings.Tyson focuses on numerous themes throughout the work, including race and sexuality (the one way sign in the South’s interracial sex life), Christianity and race, paternalism, Black Power and Civil Rights and history and memory (to name a few). As for his sources, Tyson used not only family memory and diaries, he also used the criminal court records from Granville County and the Francis B. Hays Collection at the Richard H. Thornton Library in Oxford, NC. He also used the NAACP Papers at the Library of Congress and collections at various places throughout North Carolina, including the University of North Carolina. His primary sources also included the Raleigh News and Observer and he attempted to use the Oxford Public Ledger (although the latter is missing for most of 1970). He also used numerous secondary sources too numerous to mention. This is a well written and well researched book and it is very difficult to put down. It is told from a first person point of view, quite rare in historical research. The strengths of the story as in its powerful arguments that the Civil Rights Movement was not successful until African Americans finally resorted to economic protest and violence as well as in the background story discussing such topics as sexuality and history and memory. The only weakness is the lack of footnotes/endnotes and the use of a bibliographical essay organized by chapter rather than a bibliography. But these criticisms do not, in any way, take away from the quality of the book or the power of the argument.

Using a 1970 cold blooded murder of a young black veteran in Oxford, North Carolina as his basis, Tyson has written a book all about the civil rights movement in North Carolina. Along the way he weaves the story of several families for a couple of generations, and causes the readers to painfully ponder their own prejudices, no matter how deeply they're hidden. I ended up buying this on Kindle after I read the library book, because I know, I'll read it several more times, just to get what didn't register the first time. Another must for everyone, no matter how enlightened and unprejudiced you think you are. I dare you to read this book, imagine yourself in the shoes of any of the people in the book, and then see if you're still the same. Very sobering.

This is a beautiful book. I reviewed it via the library and then purchased my own copy. The personal stories are wonderful and very interesting to read. I tend to read cookbooks for the history/stories as much as for the recipe content. I have made 2 batches of the basic de Leche - the taste and color are wonderful. I made them in 1/2 batches, using 1/2 gal. of milk and the appropriate measurements of the other ingredients each time, because I do not own a 12 qt. pot, only an 8 qt. and that was sufficient to accommodate the volume. There are a couple of issues that I became aware of during my cooking. 1. The book does not lay flat and must have some weighted object to keep it open. 2. If you live at altitude, make your cooking temperature adjustments for the boiling point. 3. Watch carefully your cooking time, it may not take the entire 1 hr. 45 min. to reach the desired doneness. My first batch reached the confectionairy stage before the total cooking time was reached - to solve this issue and make it the spreadable consistency I was seeking, I thinned it with some heavy cream. I gave some as a gift and have had rave reviews. I am excited to try some of the other recipes - especially the cheesecake.

I'm giving this 4 stars instead of three, just because the spirit in which the book was written is so sincere and loving. The author clearly loved and cherished her grandmother, as well as her Argentinian roots, and that clearly shows through the darling stories and comments. Although I haven't made any of the recipes -- and I'll update this with specific information once that happens, I wasn't able to give it a full 5 stars because of the lack of pictures. Hold on! I know some are saying, "Pictures needed in a cookbook, rubbish!" I'm firmly in the group that does NOT need photos in cookbooks. However, given that this is written for an American readership, it would have been nice to see at least some of the recipes that are unfamiliar outside of the Argentina or the Latin-American world. I know that photos add expense, and I get that this is a family business that does a lot for the community. Drawings, real drawings that replicate the dish, would have been a great substitute. Or, a middle sections with even a few photos - - maybe even a collage of photos.... I DO recommend this book if you're looking for a cookbook that's different from most of what's out there.

I love Dulce de Leche... so when I saw this book I had to check out the recipes. I was in for a surprise, because I learned a whole family story behind what makes this sweet treat so special to the life of the Argentine author. Her anecdotes were heartwarming... but the recipes take the cake. I imagined the book would be mostly dessert items, but it includes dishes for breakfast, afternoon tea, snacks, dinner and desserts. I like to see photos of recipes and was happy to find them on the author's Instagram: JosephineCaminosOria. In fact, I also learned that she sells an all natural Dulce de Leche online at her ladorita website. I have made the sweet potato ravioli, which were heavenly (although when I stacked them one on top of the other in my serving dish, they stuck together a bit upon cooling) and the carrot soufflé. My family loved the soufflé as a side dish. It was wonderful and I will definitely be making that again for a holiday meal. On the sweeter side, I have baked the divine carrot layer cake and dulce de leche flan. I would highly recommend both. Looking forward to trying out some other recipes in the future. Hopefully, the salmon next...

This book is a special book about the "taste" of Argentina. Having travelled much of Patagonia in Argentina and Chile over 25 years, I love the flavor of Dulce de Leche in all the many ways you can enjoy it. This is not a Carmel sauce that most Americans have tasted but a vastly richer and wonderful contribution to the foods of South America---especially Argentina. The real treasure of this book is all the ways you can enjoy Dulce de Leche on a wide variety of foods from veggies to deserts! The author did a masterful job of presenting this book. I love fine flavors and this book will be a great edition of exceptional recipes to enjoy!

Wow, this book opened a new world of flavors for me. After hearing the author on NPR, my curiosity was peaked. I'd heard of Dulce de Leche, a local bakery makes some amazing DdL cookies, but I had no experience with homemade. After creating my first batch, I'm totally hooked! Just putting it in my coffee each morning is fantastic, and of course that's just the beginning, because Josephine gives you a whole cookbook full of uses from breakfast thru dinner and beyond. Is it worth it standing at the stove and stirring a pot for 2 hours? Yes, it is worth it!

WOW...I've made so many yummy recipes over the past six months since buying this book. Usually my cook books seem to get used once or twice then find themselves on a shelf living a lonely life never seeing the light of day. Not this book! Not only is the actual construction and cover of the book beautiful (its fully displayed next to the stove top in my kitchen), the super simple laid out sweet and savory dulce de leche dishes have my family always coming back to this great book for more delicious ideas. We have tried a number of recipes, and they are all so fun and easy to make and absolutely delicious to eat.Do yourself a favor and add this cookbook to your kitchen, it won't disappoint! If you're like me you'll fall in love with it and give it away to all of your friends and family. I highly recommend this book!!!

I’m an Argentine who has been living in the States for more more than 15 years now, and this book is a taste of home for me and brought back so many childhood tastes and memories. It also includes recipes that incorporate new ways to use dulce de leche that are more tailored to the ways Americans eat here that I’ve enjoyed trying. Finally, a book that introduces the real Dulce de Leche we all love in Argentina. I highly recommend this book. I love it, and my kids even more!!! I got few books to give as a present to my close friends.
